Creamy Seafood Pasta Recipe

Today at STYLEanthropy, we dine in style with this Creamy Seafood Pasta Recipe. It was Lenten Season when I discovered this dish. As a Catholic, Lenten Season means no meat on Fridays and Holy Week. Others make it a sacrifice not to eat meat the entire duration of Lent. So one Lenten season, many eons ago, I decided to be creative. Previously, I tried the recipe of a quick and easy Chicken Alfredo at the back packaging of the Campbell Mushroom soup. It only required pan fried chicken strips added with the mushroom soup and milk. It was delicious. So I thought, why not try the Campbell Clam Chowder soup this time around? Thus, I made my own Creamy Seafood Pasta which I’m sharing below.

This Creamy Seafood Pasta is an easy and delicious take on a seafood Alfredo dish. It's quick and easy to make, and doesn't require much skills in the kitchen.

Ingredients
  • 1 pack of spaghetti or fettuccine noodles, cooked according to package directions
  • 1 tbsp butter
  • 1 tsp minced garlic
  • 1 can of Campbell's Clam Chowder Soup (regular size)
  • 1 can of evaporated milk
  • 1 cup Parmesan Cheese
  • 1 cup Cheddar Cheese
  • Dash of garlic powder (optional)
  • Dash of Italian seasoning (optional)
  • Salt and pepper to taste
  • Parsley, fresh or dried, for garnish (optional)
Instructions
  1. Cook noodles according to package directions and place in a serving dish. You can start cooking the sauce while the noodles are boiling.
  2. Melt butter in a big sauce pan, pot or wok, enough to hold all ingredients prepared.
  3. Saute garlic until light golden brown.
  4. Add the clam chowder soup and heat until boiling.
  5. Lower the heat to low-medium setting and add milk, parmesan cheese and cheddar cheese.
  6. Simmer for about 5-10 minutes.
  7. Add a dash of garlic powder, Italian seasoning, salt and pepper to taste. Stir.
  8. Remove from heat and pour over noodles.
  9. Garnish with parsley and serve with toasts.
