The longing of summer entails copious amounts of party planning. Backyard BBQ, pool parties, picnics by the lake or shore – the plans are endless. Right now, I’m salivating over corn on a stick, watermelon, freshly grilled fajitas, and some light and refreshing summer pasta! So for today, I thought I’d share with you this super easy, done-in-30 minutes, no-meat pasta dish that you can pair with all the grilling summer has in store for you. If you’ve got vegetarian friends, this is perfect to serve at your summer parties. They can eat this, while your non-vegan friends can top it off with the meats you’re grilling. Everybody wins!
So late last year (hides my face in shame), I posted a photo of a fruit crepe that I made that night. Someone asked if it was easy to make and I sure told her it was. I also promised a recipe. And umm… a couple months have passed, and I have yet to post the recipe until now (hides my whole body in shame – so sorry). So finally, here it is. The thing is, I took some photos way, way, way back… and then our external hard drive took a hit and I lost thousands of photos (sniff) including those of this crepe. The warmer and brighter days are finally here. Ahhhh… flowers blooming, fresh fruits ready for the taking, backyard partying, patio dining… the fun possibilities are endless. Thus, the warmer season has inspired me to create a light and fresh Spring Salad with Hormel Pepperoni. It combines a mix of melon, honey dew and mint for that crisp and refreshing bite. But adding in cheese and pepperoni gives this salad a salty kick for a delicious appetizer or side. I actually ate this for breakfast and it got me fueled up for the day. And if you have kids that you are training to eat salads, the pepperoni may just be the stepping stone.
